IN 30 SECONDS

The Nobile Method in one sentence.

The Nobile Method® is the scientific protocol developed by Dr. Roberto Rubino to measure food quality through objective parameters—polyphenol content, aromatic profile, nutraceutical properties—correlating them with the production systems that generate them.
Translated: it demonstrates, data in hand, why a pasture cheese is not equivalent to one from a barn. Why oil from a centuries-old olive grove is not equivalent to one from an intensive plantation. Why wine from living soils is not equivalent to one from depleted soils.
No labels. Only numbers.

WHY IT EXISTS

The agri-food system has confused "good" with "sold."

For decades, the debate on Italian food quality has been played out on the terrain of marketing: labels, denominations, evocative packaging, rural storytelling. But the consumer—and often the producer as well—has not had tools to objectively distinguish an authentic product from one merely declared as such.
The Nobile Method was created to fill this void. Not with another label, but with a shared scientific language that puts producers, researchers, restaurateurs, and consumers on the same informational level.
The basic question is simple: if food quality depends on the production system, can we measure it? The Nobile Method’s answer is yes, and it shows how.

“Quality food does not need to be defended: it needs to be recognized. That is why we built a method.”

cit. Roberto Rubino

THE FOUNDATION

Four scientific principles

The pillars on which all applications of the Nobile Method® rest.

Leaf Leaf

01 - BIODIVERSITY → MOLECULAR COMPLEXITY

An animal at pasture feeds on hundreds of different plant species. Those molecules—polyphenols, terpenes, unsaturated fatty acids—end up in milk, meat, and finished products. The richer the diet, the more complex the molecular profile. It is measurable.

02 - PRODUCTION SYSTEM → CHEMICAL SIGNATURE

Open pasture, extensive farming, cultivation on living soils are not just ethical choices: they produce distinct analytical signatures compared to intensive systems. The differences emerge in polyphenols, aromatic profiles, and nutraceutical properties.

03 - TERRITORY → IDENTITY

Latitude, altitude, exposure, soil, climate: each territory imprints its own signature on the products it generates. The Nobile Method allows us to read that signature, distinguishing products with the same name but profoundly different in their actual characteristics.

04 - RESEARCH → SHARED KNOWLEDGE

All Nobile Method protocols are replicable by independent laboratories. The results of our research are published and made accessible. No secrets, no closed patents: measured quality is—by definition—demonstrable.

THE ANALYTICAL PARAMETERS

Three families of parameters.

The Nobile Method analyses focus on three groups of indicators, chosen because they are directly correlated with the production system.

Location Location

POLYPHENOLS

  • Antioxidant compounds that derive directly from animal diet or from cultivation on living soils. A high polyphenol content is one of the most reliable indicators of quality: measured in the laboratory, it objectively distinguishes pastoral products from industrial ones.
  • Measured examples: milk, aged cheeses, extra virgin olive oil, wine

AROMATIC PROFILES

  • The spectrum of volatile compounds—terpenes, aldehydes, esters—tells where a product comes from. Gas chromatography returns “fingerprint” profiles that allow samples to be compared in a replicable way and adulterations or standardizations to be identified.
  • Instrument: GC-MS (gas chromatography coupled with mass spectrometry)

NUTRACEUTICAL PROPERTIES

  • The nutritional value that exceeds the simple content of proteins, fats, and carbohydrates: omega-3, CLA, fat-soluble vitamins, lipid profile. It is these parameters that define the actual impact of the product on consumer health.
  • Measured examples: omega-3/omega-6 ratio, vitamin E, beta-carotene

💡 The Nobile Method analyses are conducted by independent university laboratories, in collaboration with research institutions such as the University of Messina (Prof. Chiofalo’s Center) and other academic partners. The data are published and accessible.
